It sounds like an oxymoron, I know. But I had the flu recently and it brought me back to when I was a kid and my mom gave me chicken noodle soup whenever I was down sick. (Pre-vegetarian me of course) Now, I'm looking for a soup recipe that is chicken noodle soup without the chicken or chicken broth or all that nastiness, with perhaps additional yummy vegetables added. Any suggestions?
I have heard of just 'noodle soup' before, I guess if you started with that you could add anything for flavouring e.t.c. I'll try and find a recipe for it.
ok, ive never made it and im making it up as i write but... cook some celery, carrots, garlic, a small onion, (potatoe maybe?) in a little amount of vegetable stock and cover and cook until tender. (covering the pot makes them cook faster, you dont want to stand there for an hour when it could have been done 45 min ago) and add the rest of the stock (id say a 16 oz carton should be good for a few bowls) i dont cook noodles but you could boil them in a saeperate pot and strain the water and add them after. (if you use rice make sure you cook them seperate or else theyll soak up all your broth) then id throw in some morningstar chik'n strips (not the ones with batter on them, thatd be weird) or you could use plain tofu but the chik'n strips are seasoned so they have a good flavor and theyre already cooked so you just have to heat them up. and add a little sea salt and some black pepper, oregano, basil, bayleaf, other soup spices, maybe some lemon juice? then just simmer it covered until everything is heated through and tender and enjoy your soup! (like ive said ive never made it before but ive made other soups and theyre all pretty similar to this but ive never used tofu in soup so i dont know if you should add it sooner or later, id add it somewhere between adding all the broth and frying the veggies.) and id drink some green tea with honey in it and eat a piece of dark chocolate afterwards.
