good vegan stoup (spicy)

    on med high heat, fry (in some oil and vegetable shortening but not too much...) 3 potatoes, 1 small onion, 2 fat carrots, 1 celery stalk, 2tbsp garlic, in a pot (if you cover them they cook faster) until tender and can be easily chopped. add vegetable stock (a big box of it, not sure how many ounces, 16 maybe?) and a 28 oz can of crushed tomatoes. add tsp ginger, tsp cinnamon (not cinnamon sugar), tsp cloves (all ground) mrs dash hot n spicy (to your taste, i used maybe a tbsp?) mrs dash garlic and herb, ground black pepper, some sea salt, oregano, rosemary, basil, 3 bayleaf, and whatever other spices you want. when i made it it was pretty thick (i thought crushed tomatoes would have some chunks, i was wrong) but it was good this way. i was watching emeril and he was making some shrimp and i thought eww, but i wanted something spicy so i experimented and came up with this. my mom was the only one that didnt like it. but this recipe is just a suggestion and i find you can make infinite soups with carrots, potatoes, celery, and onion as main ingredients.
