Hey Guys Been one for I don't even remeber....not long...probly about 4 months now. I just want to make sure im doing this as healthy as possible. I know right now I am definatly not. I have started taking a B12 suppliment as recomended to me by veganoutreach.com and have been looking into a couple different multi vitamins (serious ones...not just flinstone vitamins ) But I fear I may not be getting a wide enough variety of fruits/vegetables....maybe you could throw out an average day for some of you guys...what and how much of it you would eat? I tend to like my carbs alot to....I mean you have a salad...but thow that in a wrap and boom you got a party...hehehe. Or a dammm good veggie pasta....or veggie sandwich....or just grilled veg in a tort/pita. French fries...... my evil fav food...hehehe. I also eat alot of the same veg.... carrot/onion/ peppers/mushroom/corn/celery/zucinni/tomato/lettuce with lots of veggie burgers thrown in there....and when my grocery store actualy manages to have soymilk in stock not that nasty vanilla flavoured stuff and the chocolait is no good for cereal....but I do eat a fair bit of healthy cereal when they have the normal flavoured stuff ( once a month) for fruit... mango (canned/dried)/mandrin orange (canned) /bananna (dried)...not much fresh fruit in my diet either.......the occasional pear/apple thrown in there....probly not so good for me .... I get quiet a bit of nuts... peanut/almond/cashew and endless bags of trailmix type stuff.... Thanx for any help you can give Peace
It's pretty much the same story here. I do like the chocolate because it's rare that a vegan is able to get much chocolate as you're always searching for dark chocolate. I had an apple friday. Bananas are a good potassium source, as you already probably know. I've been feeling like I want oranges lately. I think I've only eaten grape fruit once or twice in my life... I can't see how someone can actually consume that stuff. Veggie Slices are icky plain.... the monteray with the peppers in it isn't so bad... I've quit eating bocas except for once in a while I throw one in stir fry. I like portabellas... lots of protein. I usually eat trail mix in the summer... it just doesn't go well with cold temperatures... that's just my feeling and opinion though. ~ George
Sounds like your eating healthy to me. Maybe a bit more fresh fruit but canned/dried fruit is still good and its better than no fruit. Keep up the good work
I think you eat pretty healthy. You could stand some more dark green veggies (broccoli, Brussels sprouts, collard greens, mustard greens, etc.) and more fresh fruit, but you eat better than most people I know. Here's a couple sample days of what I might eat (I like to cook): Breakfast -- Steel cut oatmeal with vanilla soy milk and blackstrap molasses, orange juice and a banana. Lunch -- Homemade red beans and rice with a big green salad with lots of veggies (mustard greens, romaine lettuce, carrots, bell peppers, celery, radishes and kidney beans), a slice of homemade carrot zucchini bread (lots of omega 3s from flax seed and walnuts). Snack -- Fruit smoothie. Dinner -- Gardenburger Riblets with boiled baby red potatos and steamed broccoli. Mixed fresh fruit (melon, grape, kiwi, pinepple) for dessert. Breakfast -- Soy fruit yogurt mixed with Grape Nuts cereal. Unsweetened applesauce, herbal tea. Lunch -- Pita stuffed with hummus, avocado, tomato and sprouts. Quinoa and black bean salad (lots of fresh veggies shopped up in this). Nectarine. Snack -- Two or three Vegan fig newtons. Dinner -- Acorn squash stuffed with cranberry/apple rice pilaf. Steamed asparagus. Banana nut bread (more happy Omega 3s).

I know I could use more beans in my diet to, but other then protien do they have much in them? your definatly right about the dark greens....I love broccoli but despise brussel sprouts...probly one of the only veggies that I haven't picked up a taste for, but im sure I can get some more dark green veg in me... what are collard/mustard greens?
Beans are also high in fiber, iron and potassium and are low in fat. Collard greens may be mostly a dietary feature of the Southern United States. They have more of a leaf lettuce-like texture, and are quite good raw and can also be cooked. It's too bad you don't like Brussels sprouts. It took me a long time to get to like them, but they are one of my favorites now. Bok Choy is also a good leafy green vegetable choice. Bok Choy is high in Vitamin A, C and Calcium and a 1/2 cup serving is only 15 calories.
Broccoli is great raw with veggie dip or even in a stir-fry. My ex liked brussel sprouts so on a rare occassion I got them, but even smothered with cheese or mustard I still didn't like those. About the only time I liked cauliflower was yrs ago when my mother made homemade pickles and put cauliflower in some of them. My favorite vegetables are still carrots, summer squash (if its cooked right), corn-on-the-cob, & broccoli.
