ahh, autumn...the time when a young man's fancy turns to thoughts of fungi. who's going picking? what are you looking for? what are you going to make with it? my friends just went out and picked about 15 pounds of chanterelles today! they grow in abundance here in southwest BC. unfortunately, i wasn't able to come with them. i was so bummed. but at least i still get to eat them! i'm thinking of making a mushroom tart/pie, or lightly sauteeing them, rolling them up in phylo pastry and baking them, like spanikopita. i might make potstickers, too. and i'm definitely going to try a nice mushroom risotto. any ideas or recipes?
what? nobody's picking mushrooms? that's a shame... so i made those chanterelle phylo strudels and they were okay. i used too much of the phylo and it was really dry and papery...it needed a nice soft goat cheese, i think. still haven't got around to the risotto, but i've got time. my friends went picking again, and again i wasn't able to go. but this time they got some pine mushrooms, golden chanterelles, and boletus mirabilis. mmmm...
