I live on a military base, please remember that. So vegetables are hard to get here, and I'm not going to walmart, because 1. i dont like walmart and 2. Avacados ALONE are seven dollars where I live. Soo.. can some of ya give me an ideas? Please? I'm mainly doing it cause my husband has to lose.. 50 pounds, or something for work and I Just want to get back into shape like I used to be. so like.. what do you guys eat for snacks? breakfast? you know? stuff? I'll give you a couple of my favorite's that I do know... I don't do vegan.. so.. Baked Omellette, with peppers and stuff and you put the soy cheese *Im lactose intolerant* on top of the eggs in the casserole dish, it's really good.. anyway.. uhm... Lunch... omg. Hot Salsa with bluecorn chips, those are so good. Dinner... I like any pizza made from Amy's, but I really like the tomato/spinach one.
here's just one link i found... just type in vegetarian shopping list in google and see what you come up with... Vegetarian Times Veggie Pantry List
If you like omelets you would probably like quiche you can make good ones really cheap. I use already made pie crust carrots go good in them and are cheap I put what ever veggies look good and is on sale in them spinach, broccoli. You can make a bunch of them and freeze them then just let thaw and have them later. The brown cage free eggs are the best. Mexican food is good also you use substitute meats in them, if it calls for shredded chicken you can use beans instead or tofu.
Staples here (and forgive me for haing no ida what is available on a military base) Cheap and healthy Brown rice. and dry beans, Frozen veggies- always good to have on hand. Frozen fruits(like blueberries) are EXCELLENT snacks too. Pasta dishes,- noodles( I buy some of everything based on price and what we want), canned tomatoes, some of those frozen veggies, garlic.Sauce is easy and cheap to make mex dishes- canned refried beans(sometimes I just make beans) salsa, tortillas, hubby usually makes some killer rice dish to go with-I haven't got his skill for that though.lol cereal- shredded wheat, fllakes, cherrios -are the kids fav- oatmeal - I get a big thing to throw in recipes and as a snack nuts and seeds.(I always have pecans/or walnuts, sunflower seeds, and flax seeds-which I also grind up to make flax meal and use for egg replacer) -they are Great snacks, and great for protein in food--like in pancakes,waffles,muffins.-which are simple, cheap and much more healthy to make on you own,so get some wheat flour. Dried fruit is another great snack. Also, mix some nuts and seeds, with equal part dried fruit, and a bit of dry oatmeal and honey and SQUISH it into a dish makes some yummy granola stuff.( i hae had them turn out gooey or HARD like packaged bar,I haven't mastered the homemade "bar" formula myself) Popcorn is a good snack.I pop my own And of course sandwiches of all kinds, i am working on making my own veggie burgers ,more often instead of relying on the pricey store bought ones. PB& J is always good ,too. We usually make our own pizza,we get wheat dough at the local pizza place(ask around many places do this now),and we just tried cheesless vegan pizza loaded with veggies, its AWESOME!
Well, me personally I love Indian food, but I don't know how easy that will be to come by on a military base. I usually make mushroom curry, which is just canned mushrooms and curry paste, and I dice up a potato and toss it in too. And I eat a lot of veggie soup. Read the labels though, all soups are not created vegfriendly. If you are looking to lose weight I'd trade in the corn chips and salsa (unless the salsa is homemade) for some baked pita chips and hummus. And I wouldn't eat that as a "meal". Amy's makes some other good things you might want to try, a soy mac & cheese that is pretty good, and burritos. Sorry, I don't have more ideas because you are on a military base and you said fresh vegs/fruit is hard to come by.
what's nearby in the way of farmers markets? CSAs? eta: http://www.ncsteps.org/media/FoodGuide436988.pdf. http://maps.google.com/maps?hl=en&um=1&ie=UTF-8&q=farmers+markets&near=Fort+Drum,+NY&fb=1&view=text&sa=X&oi=local_group&resnum=4&ct=more-results&cd=1
Wow thanks for the links guys! All these links are fantastic.. as for cereal, I've fallen in love with grapenuts despite my TMJ and the migraines. I never realized there was so many farmers markets... There is a little store around here called "the mustard seed". However, it's also very expensive. I lived in Olympia, Washington so I am totally used to having an organic grocer/hippyshop on every block. To show my gratitude I have decided to forfit my personal vegetarian recipes in the recipes section, along with my recipe for my famous.. eggplant lasagna.
I LOVE grapenuts hot, my teeth are all fillings and weakness,i can't eat them unless they are a bit soggy
