spicy red lentil soup ...(vegan and carnivore friendly)

    This is a good easy soup I like to make, the vegan method only takes about an hour to cook. I have have also included an alternate cooking method which uses a slow cooker and includes meat.


    -2 onions- sliced
    -sliced carrots... add till it looks right
    -sliced celery...add till it looks right
    -4 diced tomatoes
    -diced fresh chili peppers to taste .. I use 3-4
    -1 cup dry red lentils
    -1 can chick peas.
    -1 can camonelli beans.
    -3 cloves crushed garlic
    -aprx 1 tsp grated fresh ginger. ..(probably more)
    -2 tsp garam masala
    -3tsp ground cardamom
    -2 tsp cumin
    -6 cups water

    -optional....1/2 pound cubed lamb or mutton meat..this soup is delicious with or without

    start by frying the onion and celery and carrots, ginger and garlic in the bottom of the pot with bit of of olive oil, when onions are cooked add the water and the rest of the ingredients, and bring up to simmer. The lentils should cook within an hour. when cooked, take half the soup and puree it in a blender, then add it back into the soup... and shes ready to serve

    alternately...add the half pound of stewing mutton or lamb into the veggies when frying every thing, then put the veggies, meat and everything else into the slow cooker and let it simmer for 10 hours.... no need to bother with the blender when cooking this way.
