I used to work out a lot (used to) when I was still in college. Since my time was seriously crunched, I was always looking for ways to make quick, healthy meals. This one was my best, IMHO. Pretty simple: Cook oatmeal as you normally would. Cut up a banana (almost any type of fruit works well) into the oatmeal when it's just about done. Stir in a pretty good size gob of peanut butter A little honey, maple syrup, molasses or sugar to sweeten it up a bit. That's it! Pretty darn tasty and quick. It gives you a nice amount of protein and some good carbs to fuel that hungry engine! Oh, yeah...a little pat of butter goes well with this too, but it's not necessary.
With Raisin-Brandy Sauce spooned over the top it could be a dessert. 1 cup raisins 1/3 cup corn syrup 1/4 cup brandy 1/2 teaspoon ground cinnamon Prepare the sauce the sauce the night before to let the raisins plump up in the brandy.Combine all the ingredients in a small saucepan over medium heat and simmer, stirring to prevent burning, for about three minutes. Set aside to cool, then refrigerate overnight. Add chopped walnut pieces just before serving.
After backpacking for two weeks over the summer I got into the habit of eating uncooked oatmeal. It is just about the fastest way to "make" instant oatmeal. Now I have started just eating plain dry oats.
