Brown Rice and Soybean Cutlets

    1 can whole soybeans, drained and mashed
    1/2 onion, chopped
    2 narrow stalks celery, chopped
    1 small chopped banana pepper (or another mildly spicy pepper)
    a little leftover tomato sauce (maybe about 1/4 cup?)
    2 eggs, beaten
    couple squirts Bragg's
    few dashes hot sauce
    paprika
    oregano
    garlic granules
    vegetable salt
    2 cups wheat germ or bread crumbs
    1 cup brown rice, that has been cooked in V-8 or similar

    These are really good.

    Chill mixture before shaping. Keep patties small. I make longish patties, about 3". Coat in bread crumbs or additional wheat germ before browning in oiled skillet or griddle on both sides. May be sprayed with olive oil and baked. Serve with tomato sauce, and a little cheese if you like. Good hot or cold in sandwiches with ketchup.
