good veggie ideas for cranberry sauce???

    so my family isn't keen on cranberry sauce plain. so i'm wondering if anyone has any good recipes i can use it in instead??

    some commercial brands have gelatin, a veggie no-no.

    my cranberry sauces. i make three, and freeze the leftovers because I'll just sit with a spoon and eat them.
    basic process (I use processes over recipes)
    2 c cranberries
    1/2 c agave nectar (or whatever sweetener rocks your world) plus I keep the bottle out for adjustments later
    1/2 c water
    spices: sweet, spicy or both
    boil water, add cranberries and ground toasted spices. cover and let the berries explode. this is a violent dish. but fun. if it spatters, clean as you go, seriously.
    once the berries have mostly exploded, take it to simmer.

    now you can change the personality of the dish

    With basic sauce meant for people who think that it comes out of a can, add cinnamon, cloves, allspice, things in that line. And orange zest. You'll probably need to up the sweet, and maple can be wonderful at this point. maybe vanilla, but only the real stuff.

    sauce I'm sharing with my mom
    add diced fresh jalapenos (2), peppercorn, ginger (fresh, this is slow heat) or candied ginger, diced very fine.

    for my house -heat
    scotch bonnet, 1/4 to 1/2 in place of the jalapenos, fresh ginger, cardamom, peppercorns, adobo pepper (1/2, for the smokiness, liquid smoke works too)

    my house - fruity
    cardamom, peppercorn, ginger, dried cherries or whatever, orange zest, lime zest and a splash of pomegranate juice.

    My mom makes cranberry-orange relish every year.

    Throw 1 bag of raw cranberries & 2 oranges (including the peel but not the hard little "belly button") through the food processor along with 1 cup of sugar. (You might need to add a bit more... we tend to like our foods SOUR!!!) Let it sit overnight - this gets better as it ages. I don't have a food processor, and it doesn't work so well in the blender or by hand-mincing the oranges. (trust me, I've tried) But if you DO have one... this is pretty good for a last-minute treat! :)


    I haven't tried it quite yet, but this is the recipe I'll be trying this weekend after rediscovering a bottle of pure syrup in the back of our fridge ;)

    Cranberry Sauce with Lime and Ginger
    * 1/2 cup water
    * 1/2 cup maple syrup
    * Juice & minced peel from 1 lime
    * 1 12-ounce package cranberries
    * 1 teaspoon minced fresh ginger
    In a medium saucepan, stir together water, syrup & lime. Bring to a boil, then reduce heat & add cranberries. Let simmer uncovered for 5 minutes, stirring occasionally. Add ginger & simmer until berries burst & mixture begins to thicken. Cover & let chill for 12-48 hours.

    Good luck! I have a cranberry addiction that's ALMOST as bad as my pumpkin addiction!

    haha yeah im the same way.
    pumpkin is one of my all time faves as well.
    i like a sweeter cranberry sauce, of course thats if i can stomach it this year as ive been suffering from 24/7 morning sickness..lol

    Seriously, are you considering veg-dom? this is a support area more than a free for all like the rest of our forums (which is why I put the debate in Hippies, so more people could get into it)

    New veggies get this whole list of "secret" (read: didn't realize) animal ingredients.

    yeah fruit has been the only thing i can keep down lately.
    it seems too salty or too sour comes back up. ugh. its getting a little better though now that i am heading into the 11th week , and lets hope thanksgiving dinner sits fine..lol

    i am not sure if you're stuck with cranberry... i know it's a tradition and so on.. but you could try such a sauce that works perfect..
    you can take prunes, boil them for about 5 minutes, puree them and add any sour juice you want (lemon, orange, cranberry) so it looks like pancakes batter, not liquid and not thick. Then, add salt (little), pepper, little bit of garlic and little of olive oil, also any herbs you like. mix it all. it's so tasty.. i used to actually make such sauce with fresh plum puree, but i really prefer sour plums (then, you don't need to add juice), just i can't find them in stores..
