Sounds gorgeous...I would probably add something green, like basil or baby spinach, but overall, delicious.
So we're doing our own sandwiches? Meh, a sandwich should be simple like Snocbor's. I am quite a fan of grilled chicken, sundried tomato pesto mayonnaise, baby spinach, fresh tomato, cashews and a small amount of avocado in a grilled turkish roll, maybe some bacon if you're a fatty. Probably about as complicated as I would get.
Yes yes, this was just something simple and delicious, banana peppers set it off...and I am no fan of mayo, so it's just 'dry'.. but a very good combo, and true basil or spinach would be a very nice touch, how about heated with artichoke and tomato instead of the peppers yum.

I see my family fill their food with so many sauces and powders that my head spins around. Your sandwiches are a bit the same dave...but I'm me. When you're forced to eat simple foods, you learn to appreciate the difference between an overpowering, mighty taste explosion, and a subtle, simple and exquisite combination of flavours.
I use subtle quantities though and, I appreciate simple foods too, I eat tortillas plain, and cubes of bread with butter over them (owns popcorns face) but, really these are good sandwiches so long as you don't overseason them.
