I just made this the other night for my girlfriend who was been a vegetarian for 7 years now and she claims there is nothing else like it (or maybe she just loves me too much to say anything else) either way, it's something my mother has made for me since I was young and I never took notice that's it is meat free. I'm still an omnivore but I enjoy meat-free recipes equally. Heads up for you vegan folks, it's not exactly friendly unless you try it with vegan 'cheese' *shudders* or if they make a vegan sour cream-I'm not sure if that exists. Here goes: Head of iceberg lettuce, one cup of grape tomatoes, one avocado, 2 cans of drained kidney beans (black beans or pinto beans just don't seem to work the same way) bag of Fritos, some chedder cheese if you please, sour cream, and salsa. I like Pace myself, it really doesn't matter as long as it's chunky. Make your typical salad with the lettuce and tomatoes, then add Fritos and beans on top. Before adding the salsa and sour cream into the bowl, mix equal parts into a 'dressing' and then toss lightly. I then like to slice avocado ontop and finish it with cheese. s n' p to taste.
