Ever since i had some vegan chili at one of the fairgrounds in mass. I havent been able to find it again... Anyone have a recipe for some good vegan chili??? most of them ive found are just plain peppers n garlic... lookin for something with more in it than that,,
I don't really have a written recipe, but this is what I usually put in my homemade chilli. -Black Beans -Kidney Beans -Tomatoes -Red+Green Bell Peppers -A couple of cloves of Garlic -half a dried chilli pepper -corn -red onion -a chipote pepper -chilli powder
3 tbsp olive oil 2 tbsp butter, omit if wanted vegan 1 tbsp grated ginger seeds from 4 cardamom pods 1 tbsp ground corriander 5 cloves garlic sliced 2 onions, chopped 2 fresh red chili peppers, sliced 1 cup tomato sauce 2 cups canned garbonzo beans, drained 2 cups red kidney beans 2 cups pinto beans, drained 1 bay leaf salt and pepper to taste heat oil and butter, if using, in a large sauce pan over medium heat. add the onions, chile peppers, ginger, cardamom, ground corriander and garlic and saute for 7-8 minutes. pour in tomato sauce and add the beans and bay leaf. mix well and cook over medium high heat for 15 minutes. stir often to stop mixture from sticking to the pan, season with salt and pepper. garnish with parsley and cilantro, serve hot this recipe makes four servings, hope this helps
My favorite chili is from Laurel's Kitchen cookbook. It has green pepper 1 onion 1 garlic 2 or 3 cloves chili powder 1 teaspoon cummin 1 teaspoon italian seasoning 1 teaspoon salt 1 teaspoon black beans red beans white beans kidney beans corn tomato Suate the onion and garlic in oil until tender. Then add peppers, chili powder, cummin, tomato, and saute for a few more minutes. Add corn, beans, salt and italian seasoning. Simmer for 30 minutes. The recipe calls for mashing two cups of beans before you add them. I never do. It also calls for one cup of each of the beans and corn. It calls for one whole tomato or 3 tablespoons of tomato past. I just use a can of each of the beans and tomatoes. Then I fill a can with frozen corn and add it.
Mine's essentially the same: In a food processor, puree 1 large can (540ml or so) tomatoes along with 3 or 4 whole tomatoes, 1 entire head of garlic (peeled) until even. In a pot, saute 1 entire diced onion in 1 tblsp olive oil - or better yet, sesame oil. (I love sesame oil). When onion is a bit transparent, mix in 1 of each, diced: red, orange, yellow, and green peppers. Mix well and cook for 4-5 minutes, stirring often. Add in 3 cans of beans (I usually mix 2 cans red kidney beans, 1 can white) and mix well. Add tomato sauce and 1/2 cup chopped fresh basil, mix well. Let cook 4-5 minutes. To give the texture of meat, add 1 cup bran cereal. Seriously. This tastes wicked good, especially if you cook it up the day before. To make it spicy, in the food processor with the tomato sauce I add 3 or 4 hot peppers.
This is just what I use when I make chili you can add other things if you want. Chili is one of the easyest things to make. 1 tablespoon olive oil 1 onion 1 teaspoon of sweetner 1 tomatoe (big) 1 red peper 1 can of chickpeas 1 can of kidney beans 1 can of tomatoe sauce (I use crushed garlic in a jar) I usually use about 1-2 teaspoons 3 tablespoons chili powder (add more or less depending on how you like your chilly) pinch of salt and pepper. Saute onion,tomatoe and pepper in olive oil and garlic. Add the chickpeas and kidner beans. Add tomaote sauce. Add sweetner(takes the bitter taste away from the tomatoe sauce), salt, pepper, chili powder. Let it simmer for 30 mins on low. *If it gets a little thick add a little bit of water* *add anything else you wish to the chili*

Yield 4 servings Time 20 minutes Tools knife wok, Dutch oven, or large saucepan wooden spoon Ingredients 1 T olive oil 1 stalk celery 2 medium onions 1 green bell pepper 2 c canned tomatoes, with juice 1-2 cans kidney beans, in water 1 t black pepper 1 t minced basil 1 t minced oregano ½-1 T chili powder ¼ t cumin 1 bay leaf 1-2 T cider vinegar ½-1 c cashews Directions Chop the celery, onions, and bell pepper, then sauté them in olive oil until tender. Add tomatoes and beans (with water) and all spices. Cover and simmer for 5-10 minutes, until you're happy with the amount of liquid. Add vinegar and cashews. Taste and adjust seasonings, remove bay leaf, and serve.
Those all sound really good. I just usually eat Hormel's canned vegetarian chili, but I add a little cinnamon to it.
