I acquired some cream of mushroom soup and tomato soup when my roommate moved out. Does anyone know any good vegetarian recipes to use with those? I just don't want them to go to waste! Thanks!
Besides eating the soup itself... I recently discovered slicing up potatoes (as for scalloped) and julienning onions, mincing garlic, and layering in a greased casserole dish, then baking with the mushroom soup. I use maybe half or three quarters of a can of water, and put in some black pepper, whatever spice you want... Then bake it at 350 or so for about an hour. It's pretty much just scalloped potatoes with mushroom soup, but it's shockingly delicious. I mean, I'm in culinary school and I still can't stay away from that stuff. :biggrin: Might be kind of good to try mixing curry spices into the soup mix too, I'm thinking.
