Veggie Wrap recipes wanted!!!

    So I'm living on the road this summer & I need A GOOD veg wrap recipe for selling when I get the chance @ festies/what not. Preferable vegan and definitely tasty. If nothing else I'm just gonna make up some hummus wraps but I'd rather try something a lil' bit more funky. ... Or it seems like everytime i'm on lot theres always yummy wraps w/ rice/corn/bean/other things in em but they never taste as good when I make em at home... any suggestions?? Thank you!!! Any other ideas for easy food/drinks to sell on lot/at festies would also be appreciated! so far we're planning on doing mimosas/veggie kabobs w/ couscous ....

    Spicy Tofu Scramble Wraps, they are seriously the best food ever.

    Fry an onion with roughly 3 large cloves of garlic and a few diced jalepeneos. Add chopped vegetables (my preference is bell pepper, tomato and mushrooms), a block of firm tofu cut into squares, and spices (1/2 tsp chilli powder, 1/2 tsp powdered ginger, 1/2 tsp Cayenne pepper), and a liberal splash of soy sauce.

    Fry the ingredients while mashing the tofu into a scrambled eggs-like consistency. Add salt and pepper to taste. When ready, serve in tortillas with spicy salsa (homemade or store bought.)

    Not sure how easy it'd be to prepare at a festival, but they'd go down a treat I promise. I may have missed some of the recipe, if you're interested PM me.

    I just chuck a load of veg (onions peppers potato tomato mushrooms whatever) into a wok (steam the onions and potatos first :D) add a mix of spices that taste fajita-ish and then stick the veg in the wraps ^^ Vegan friendly :) Sooooo easy :D and sooooo cheap to ^^

    I know you said vegan pref. but don't miss out on the Greek Wrap. It's so easy to make: feta cheese, spinach, diced tomatos, olives, artichoke hearts and some sort of salad dressing (caesar or italian work fine). SO good!

    Otherwise: hummus, sprouts, tomato, avocado. It's a win-win.
