be flexible after your first time trying this,, some may like it a bt less or more tangy, salty etc,,, but its damn good :)

4 large cukes (peeled and seeded)
    1/2 cup vinegar
    1/4 cup water
    3/4 cup sugar
    3/4 tsp salt
1 tsp dry dill or two tsp fresh

heat vinegar water and sugar til sugar dissolves then
mix all ingredients in a food processor and puree
    freeze
when wanting to serve puree again
serve with a mint sprig if your into fancy stuff

great way to get younguns to eat their veggies..

Hey, thanks for posting the recipe! Sounds good, I'll have to give it a try!

I made a chocolate zucchini cake about a week ago with fresh zucchini from my garden. You guys and your posts about different things to do with zucchini inspired me. I didn't tell the kids I put zucchini in the cake. They gobbled it up! I mean, they like zucchini as is, but I was afraid that if I told them I actually put it in chocolate cake that I wouldn't be able to get them to eat it. You know how kids are. ;)

Oh man, that is perfect. I was just staring at these cukes my mom got thinking, "what the hell do I do with THESE?"
Thought I was done cooking today, but I might have to suck it up and face the unbearable heat of the stove again.

    *clings to the box fan*

EDIT: Nvm, no stove involved! :)

I just love cucumbers. One of my favorite meals is peeled sliced cucumbers with oil, vinegar, salt and pepper.

At one point in my life that's all I was eating for every meal.

The only way I have ever really liked cucumbers is in tacos and in sushi. I could eat cucumber maki all day...
