Well, I normally give romance anime suggestions to guys, but will try my best at some josei/shoujo (made for women/girls) anime:

Kare Kano / His and Her Circumstances - "slice-of-life"/romance genre
Melancholy of Haruhi Suzumiya - seems to be relatively popular among women
    As mentioned above, Bleach also " " " " " " " " " " " " " " "
Boku wa Imouto ni Koi o Suru - another romance
Fruits Basket - A female fav
    Ayashi no Ceres - Sci-fi/romance
    Paradise Kiss - drama/romance
    Honey and Clover - comedy/"slice-of-life"

Well since I'll be recommending Elfen Lied as well, I'll give it a description for you.
Elfen Lied lies around the story of a Diclonious, Lucy/Nyuu(same person though split personality), who meets up with Kohta and Yuka after she escapes a testing facility since she has powers that allow her to kill people without touching them with her regular appendages. Kohta arrives in a city where Yuka lives nearby and will be attending a university with her so he lives in a family inn that Yuka's family owns. Honestly, it covers so many issues and REALLY goes there in so many aspects. It's a classic!

Another I'd recommend is Code Geass: Lelouch of the Rebellion (both seasons). Code Geass follows Lelouch who gains a power called Geass from C.C. and plans on overthrowing his father, the emperor of Britannia, and establishing a peaceful world where people live in peace so that both he and his sister Nunally can live happily. There are so many twists in this anime it's ridiculous. The ending is just insane as well. I was hooked. Actually, Bandai is hosting the entire first season in english dubbing on YouTube if you'd like to watch it! :)

    I only used to watch
    -Trigun
    -Cowboy Bebop
    -Fullmetal Alchemist

And a bit of Fruits Basket, but that was just silly.

All of those (Save for Fruits Basket)
I downloaded the entire series onto my computer and watched each completely though.
Trigun is short, but I love it.

if you're a fan of samurai champloo you need to watch cowboy bebop. like, you HAVE to. it's made by the same dude, and the guy that voices Mugen voices the main character Spike. really fantastic show.

    others i reccomend are:
    Rurouni Kenshin
    Death Note(amazing show)
Inuyasha is pretty good, but longggg
    DBZ of course(same as Inuyasha)
idk haha there are many more but Bebop and Death Note are my absolute favorites
