Comfortably Numb has always been highly rated, and I agree with them that rate it, killer solo by Gilmour. FUBB by Wishbone Ash does well also, as do many of Wishbone Ash tunes.

Tornado of Souls, or Hanger 18 by Marty Friedman (Megadeth), they are pretty good example of great soloing I find. And anything by Opeth, too many great examples. Some interesting folk influences which transcribe within the metal genre particularly well.
