1 cup old-fashioned grits, 1 teaspoon salt, plus additional to taste, 6 tablespoons unsalted butter,cubed, 3/4 cup heavy cream. 1. Bring 4 cups of water to a boil in a medium pot. Slowly add the grits, stirring constantly to avoid lumps. 2. Add the salt and partially cover. Reduce the heat to medium and cook for 15 minutes, stirring occasionally. 3 Uncover the pot and stir in the butter and 3 tablespoons of cream. Continue to stir, adding cream a few tablespoons at a time once the mixture thickens and begins to sputter slightly. Add all the cream until all of it has been combined, about 15 minutes more. Taste and add more salt, if desired.
