Sorhgum and Sugar cane also produce sugar and syrups, probably closer to what you were looking for. And as long as you're gonna be gardening, start a beehive. They make honey btw. Or look into growing Stevia perhaps? That might work better for you up in BC? (Or not, not sure.)
what about growing angelica? it's a member of the parsley family, but don't let that put you off! it should grow well where you are as it likes a cool environment and i know it grows up in iceland! do a google for the correct species though, as there are quite a few, and some can be poisonous, but if you buy seeds from somewhere reputable, then you should be ok. it's the stems that are normally used for candy(ing) just boil them in sugar syrup, really simple and easy, drain and dry, eat like sweets or use in cakes, puddings etc.
