Hey, me and my buddy were cooking some jars in the pressure cooker and we forgot to keep an eye on it. They cooked for over an hour, and the psi was well above 25. Will that harm the substrate and affect anything?

i think your substrate should be fine, just check the jars for cracks.

You could have blown a hole in your roof and burned down teh house. Or killed someone. Keep that pressure at 15 for 1 hour.

I'd be concerned your moisture level will be off now. It's 7 jars though; who cares?

yeah, if you want to sacrifice one jar, you could open it and feel the moisture. could be better off doing that than getting a bunch of contam jars

We had 24 jars in the pressure cooker. It's a decent sized one. lol. And they look like they are going pretty well. =)
