Meatless Thanksgiving

    Not that I celebrate thanksgiving (being a Brit and all) but could probably find an occasion for them.

    Thanksgiving just seems so commercial... its ironic that some ppl claim its the least so, but just replace x-mas presents with food. I'm was embittered on the sitting-there-watching-ppl-eat-a-dead-bird thing. I once had a really bad, rubbery tofurkey though. Anyone else ever try one?

    i commend people who try te whole tofu turkey thing, but i've generally just added more non-meat representative foods. bring on teh veggies and other happy meals.

    thanks. hubby and i are both veg heads...he vegetarian and i vegan and we are going to visit my grandma and fam who aren't veg heads...

    If you marinate it well and cook it long enough it should turn out fine (even better the next day).
    We love tofurkey. My kids already look forward to it.

    I like Tofurkey a lot, and I actually saw another fake-turkey at the organic shop today, called an Unturkey. My family never gets a turkey though since there's only me, my mom and grandma, and who ever my mom is dating at the time, so usually my mom makes calderetta and I just pick the beef out.

    I'm so not looking forward to Thanksgiving, first of all I hate big family gatherings, and secondly this is my first non-meat eating Thanksgiving and quite frankly I don't want to advertise it my family is so annoying, but if I don't say anything it will still be like 'why don't you have any meat on your plate?' grrr...this is going to be a mess. Honestly I don't know what I'll eat b/c in the south most people their vegetables in meat, well I can have corn and mac and cheese, I guess that's it.

    i made homemade mushroom stuffing, carrot cake, mushroom gravy, and various vegetables. i took them and shared them my meat eating family even ate some of it (my grandpa kept telling me how much he liked the mushroom stuffing i made)

    unstuffed mushroom stuffing recipe

    i used 6 cups herbed breadcrumbs, one stalk chopped celery, approx half of a medium onion (finely chopped), package chopped mushrooms (a couple cups? or your preference), 6 Ts butter or margarine (depending on preference), plus butter or margarine to saute, and two cups liquid (i prefer vegetarian vegetable broth or mushroom broth).

    saute mushrooms and onion in pan with butter or margarine, mix sauted mix with celery and dried bread crumbs in baking pan until well mixed. add melted butter (or margarine) and liquid (i found easiest to melt butter/margarine in vegetable broth) and mix so that liquid is well absorbed.

    bake 350 until done. (i made mine the night before, except the baking part and stuck it in the refrigerator. i stuck it in the oven the next morning so that it would be done for dinner with family.)

    my grandpa loved it.
