Usually when I make paneer I use the following:

    3 parts milk
    1 part yoghurt

Bring milk to a boil so it raises up. Then add the yoghurt and watch the magic. When using yoghurt the paneer tends to be more firm and creamy than when using lemon/cirtic acid/sour whey.

You can cube the paneer and deepfry it at medium heat. Next let it soak in a masala or add the cubes directly into the food. The whey can be used in your dishes where you would normally use water so nothing is wasted.

Paneer isn't exactly weight-watcher's food so eat it in moderate amounts.
