Sweet Onion Balsmic Relish 2-4 servings.. 1 red onion chopped however you want it. I like thin strips.. 1/4 tsp fresh ground pepper 1/4 tsp coarse kosher salt (or whatever you have) 2-3 tbsp brown sugar (depending on how sweet you like it) 1/3 cup balsamic 3 or 4 cloves minced garlic simmer the red onions and garlic covered with a little olive oil and the black pepper for about 30 mins on medium-low heat until noticably translucent, then put in the sugar salt and balsamic, bring to a boil for about 3-4 minutes, and then simmer until it reduces, and there is very little liquid left. There will be a strong smell but believe me it tastes like gold.. Great ontop veggies sandwiches on a good bread, avocados tomatos cucumbe sprouts, that kind of thing, I use a red pesto spread on mine also.

yeah if you dont want any sweet just cut the sugar.. You can try adding a few mustard seeds or dried mustard for more depth

oh yeah? thats awesome!! I was going to change the sugar content, I would say its probably best at 1 to 1-1/2 Tablespoon, but if people like it! Also those measurements and timing are not exact, its not a science like baking or something.. Just use your common sense and go by taste Im glad they liked it!!
Wow that sounds good Earth, gonna' try that asap. Hey, you ever try Onion Butter? Really simple, just slow cook a 10 lb bag of onions that have been diced fine or tossed through a blender till it turns into a thick paste. Great on crackers or as a sandwich spread. I used yellow onions and it came out with a very sweet / salty flavor. Good stuff.
