Hi, I've got a huge amount of frozen shrooms (frozen dried) but I can't keep them frozen anymore. Is it possible to defrost them and dry again?

yes it is possible. How long are you trying to keep them though, if it is for a long period of time you can store them out of the freezer, but you have to take necessary steps to ensure what every you store them in has no oxygen at all in it, replace the oxygen with carbon dioxide, and keep them out of light.

Is it possible to just dry them again? Or would it destroy them?

How exactly did you store them originally? They shouldn't need to be re-dried, the should have been in a vacuum tight bag that should have no ice crystals in it.

you have to really dry them before you freeze them. or else they will be all ice crystals. they are all water... Its ok if your going to eat them whole frozen. But eating 1/2 dozen fully frozen shrooms is going to be COLD and annoying after a while, depending on how good your freezer is. Freezer burn tasting shroom still gets you fucked up. but taste like shit. Just like a Eggo with freezer burn can be eaten , still taste like shit!!.///// :)

If mushrooms are kept vacuum sealed with no oxygen in the dark and a relatively cold place they will keep for very long. It is best if they are cracker dry. So when you take them out of the freezer, are they cracker dry? Because if so there shouldn't be any extra steps. If I am reading this correctly. Also mushrooms frozen without being completely dry will become VERY mooshy and gross when thawed.

    Thanks for the replies.

First of all it wasn't me who froze them, I got them frozen already. They weren't stored in an air-tight container since there was a lot of frozen slush between them. However I tried taking a few out and letting them thaw and dry and they look just fine.

Since I couldn't put them in a freezer they slowly thawed and all the ice/slush has melted. Now im just trying to get all the water out. It went better than expected so far.

At that point I would say either eat them the way they are, or just re dry them I guess.
