I had to share this (raw vegan) site. http://coolvegetarian.com I did sign up for the emails and the 17-page free ebook. I like his concept of VDD- vegetable deficiency disorder. So often even veg restaurants can be pasta and mock this that and the other happy that a vegetable on the side is really no better than the desultory limp overcooked veggies at a chain steakhouse. (and I suspect it is because the most passable mock ingredients are food service only-- I'm thinking of how some vegan cheeses went that route) Yes, there are exceptions, but I admit I would get the buffalo seitan at City O City in Denver and the only vegetable was coleslaw---- on the wrap. why? because my seitan sucks! (so far) So, check out Jeff's site. For some folks it will be meh. Some will get a chuckle (that's me) others may get a good nugget of knowledge.

We have a member who has celiac disease. She seems to do well. I'd not say seitan is a must. In fact, the city o wrap is the only seitan I eat. Soy allergies would be more problematic.
