No actual recipe to provide at this time, but I suggest making three or four types of soup (giant quantities) and freezing them in individual containers. Then if you don't feel like cooking, you've got all of this lovely soup to choose from and all you have to do is nuke it.

Soup is also good because you basically just throw a bunch of stuff in a pot and add more stuff until it tastes loverly. Tossing in a big glop of soft, blended tofu is a nice way to increase your protein intake.

    My fave combos:

    Broccolli and almond
    Lentil, TVP, and onion
    Peanut butter and onion
Cauliflower, whatever else is in the fridge, and onion
Cabbage water with a bunch of different beans floating around in it...and onion.

I just made this for the first time and it was a great sucess. The ingr. aren't super specific but soup is flexible. My meat loving bf had seconds.

    Vegan Split Pea Soup

    1/2 white onion (diced)
    1 clove of garlic (minced)
    celery seed
vegetable boullion - I used two cubes
    3 bay leaves
    2 cups of split peas
    1/2 cup of pearl barley
    2 potatoes peeled and chopped
half a bag of frozen mixed vegetables
water water water (about 10 cups)
    salt and pepper to taste

"Sautee" the onions, garlic, and seasonings (boullion, celery seed and bay leaves) in water that just covers the onions. The onions will be translucent and most of the water should be gone.

Add the water, barley and split peas and bring to a boil. I didn't measure the water I just filled my biggest pot. I think it was about 10 cups. Once it is boiling, reduce heat and let it simmer for about 45 minutes. My split pea bag said they needed 30minutes cooking time. I over cooked them cuz I like it like that. I think different brands take different amounts of time. Read the bag.

Once the peas are just tender add the potatoes and frozen vegetables and continue to simmer for another 10 minutes or until potatoes are tender. Salt and pepper to taste. I added much more pepper than salt.
