Forgive wonky formatting. I copypasted from my livestrong recipe page. First the sauce: 1 medium Avocado Raw 1 yields Lime Juice Raw 2 tbsp Light Sour Cream 1 tsp Cilantro Add all ingredients to a food processor and blend until smooth. Now the burrito: 1 egg 1/4 cup Fancy Shredded Taco Cheese 1/2 tbsp Olive Oil 1/3 cup Low Sodium Black Beans 1 tortlla Flour Fajita Tortilla 1/3 cup Tomatoes Dice the tomato (a seeded roma tomato should do the trick) and set aside. Beat eggs with a splash of water for maximum fluffiness. Heat oil in a small frying pan and scramble eggs with beans and cheese until cooked to your liking. Heat tortilla however you prefer to do so. Some people fry it in a little oil over low heat until it is warm and soft. Some use a special tortilla warmer. I usually place it between two wet paper towels and heat on low for 2 minutes, flipping halfway through. Once the tortilla is warmed and flexible, lay it out and spread the scrambled egg mixture onto the center of it. Top with tomatoes and 1 Tbsp of the avocado lime sauce and wrap it up! Just had this and I feel like I could run 20 miles. It's pretty dense. Nutrition info: 474 calories, 24g fat, 752mg sodium, 23g protein, 6g fiber, 246mg cholesterol (to tone down cholesterol, use egg whites or a little tofu scrambled with some nutritional yeast flakes)
That looks really good.... wish I had enough of the ingrediants to make it, it would hit the spot right now. *edit* I just brutally raped and murdered your recipe.... Pinto beans, cheese, eggs, tobasco, with lemon guacamole. It's pretty good, but I used twice as much lemon as I should have, forgetting the potency differences between lemons and limes.
LOL that sounds like something I would do... Still sounds good, though! Acuarela, where does one acquire cubanelle peppers? I don't think I've ever seen any, but I can see how this could be improved by a nice hot pepper... possibly pickled...
Here in PA you can find them in any grocery store, this is what they look like They are a mild pepper, but they add more flavor than regular green peppers.

You welcome, here I only see green ones, but in Santo Domingo where I'm from you could find green, yellow and orange ones. I'm glad you like them, at least how they look
Cut the avocado in half around the seed and twist the halves to separate. To remove the seed, use a quick, firm motion to whack the blade of the knife into the seed, twist and pull the knife to remove the seed. Insert a spoon between the skin and the flesh and slide the spoon beneath the bottom and sides of the avocado. Use the spoon to lift the fruit from the skin.
Hehe, this is a tasty thread if I do say so myself. Still haven't tried it with the hot peppers yet, but I have a fresh batch of the avocado-lime sauce in the fridge, so maybe this week...
