mine is a mixture of pretty equal parts bread crumbs, lays ptato chips crushed and flour, seasoned to taste with lawry's seasoned pepper, onion and garlic powders and hungarian hot paprika. I just dip it in well beaten egg seasoned with lawry's seasoned salt then coat it in the mixture and deep fry it in canola oil...I only use boneless breasts and generally make chicken fingers.

So bad for health, so good for taste! KFC is pretty good when I'm in the mood for junk food. I had Popeye's once years ago, but all I remember was it was very spicy.

Take 4 chicken thighs and debone them (sometimes you can find them in the store already deboned) and cut them up into bite size chunks. Leave. The. Skin. On. Put them in a bowl with 3 cloves of minced garlic, 3 tablespoons of grated ginger, 1/8th cup of soy sauce, 1/8th cup of sake, a few pinches of finely chopped scallions, a pinch of salt, and I add crushed red pepper flakes, but that's just me. I like heat. Mix the marinade into the chicken with your hands. Cover the bowl with plastic wrap and put it all in the fridge from anywhere from half hour to 3 hours. Basically just depends how strong you want the flavor. Once you've marinated your chicken as long as you want take it out and dredge it in some seasoned potato starch or corn starch. Your choice. But do dredge it in the starch of your choice. Some people find it easier to dump the starch into the bowl and mix it all together. It's a lot more convenient and fast, but it leads to clumps and uneven cooking. And do not overcoat your chicken. Shake off the excess starch. In a deep fryer or pot, heat vegetable oil to about 300 degrees. Fry the chicken for 7-9 minutes. Once you remove the chicken from the oil, immediately season by squeezing fresh lemon juice over the still cooking chicken. This will seal the lemon flavor into the starchy outside. It's typically served with kewpie mayonnaise, but you can use any dipping sauce you want. I garnish with additional lemon wedges and drizzling some more finally chopped scallions over the chicken. Karaage Recipe Chicken and Marinade 4 deboned and chopped chicken thighs, skin on. 3 cloves of minced garlic 3 tablespoons of grated ginger 1/8th of a cup of soy sauce 1/8th of a cup of sake (mirin works too) Few pinches of finally chopped scallions Salt to taste Red pepper flakes to taste (optional) Starch Coating 3/4th of a cup of potato or corn starch Salt and pepper to taste Red pepper flakes to taste (optional) Oil for Frying An adequate amount of vegetable oil (depends on the size of the pot you're frying in). I want to point out that other oils are healthier, but vegetable oil is really going to give your chicken the right texture and properties. If you want to use a different oil, you may want to research how to properly fry chicken with your oil of choice before attempting the recipe. Additional Seasoning Juice from half a lemon Dipping Sauce Kewpie Japanese Mayonnaise (traditional sauce) But there are no rules. You could dip it in anything from teriyaki sauce to sriracha to something as non traditional as honey mustard or barbecue. Garnish Lemon wedges Finally chopped scallions
