I've never actually tried this recipe myself, I just bought a new vegan cook book and was excited as hell when I saw a falafel recipe, but there are no eggs so you can give it a try. 2 cups cooked chickpeas 1/4 cup whole wheat bread crumbs 2 tbsp flour 1 medium onion chopped 2 garlic cloves chopped 1/2 tsp baking powder 1 tsp ground cumin 1tsp ground coriander 1/4 tsp cayenne pepper 1/4 cup chopped parsley 1/2 tsp salt dash black pepper vegetable oil for frying in a food processor combine chickpeas and bread crumbs and pulse for about 30 seconds so that chickpeas are chopped. Add the remaining ingredients and process until it's only somewhat coarse but mostly smooth. Transfer to a bowl and refrigerate about 30 minutes. Then shape the batter into balls about 1 and a half inches in diameter then flatten into 2 inch patties. In a large heavy bottomed pan heat about half an inch of vegetable oil. Test the oil by throwing a pinch of the batter in it. If the oil immediately bubbles around the batter the oil is ready. Cook the patties in the oil about 2 and a half minutes per side. Remove with a slotted spoon and place on a flattened paper bag or paper towel to drain. Prepare your sandwiches in pitas with lettuce tomato, onion cucumber, and tahini dressing, or whatever else you like on them!
