Let's face it, porn is pretty damn boring! There are only so many variations, what do you expect?

Here's a girl's opinion: Anal is still pretty taboo in most people's minds, which I'm assuming makes anal all the more appealing in the porn consumers' minds. I have no doubt that anal is becoming more mainstream in people's private lives, but until most guys have the same access to anal as they do to vag there is probably going to be a bigger market for anal than not.
