What did you cook today?

    A meat pie (store bought), with mashed potatoes and lemon-chili roasted asparagus, with a platter of bite-size puff pastries for appetizers (half cranberry-cream cheese, half italian sausage) and a platter of cheeses, crackers and fresh grapes to finish the meal on a satisfying note.

    Sole, baked in a sauce made from mustard, lemon juice, and olive oil, served with aweet potato fries.

    The fries were delicious, sole was... meh. Not my favourite fish, I'll stick to using it for tacos.

    i made soup ..threw some leftover chicken in a pot then added water ,celery,shrimp and udon noodles

    Ohhh roasted asparagus, I haven't had that in a while. Drizzle of olive oil, salt and garlic powder, bake for 10 -12 minutes on 450F degrees on a cookie sheet to crisp it up. Asparagus caramelizes nicely to sweeten it. Yum! Sometimes I'll wrap a few spears in bacon. Double yum!

    Crisp it up? What is this strangeness that you speak? lol I can't say I've ever had baked crispy asparagus.
    I guess I'll have to try that.

    The dawning of the age of Asparagus..

    I just had clam chowder delivered. i did the hard work putting some crackers in it.

    The spears caramelize and you get a nice brown crust on them. I should edit my post. I actually put it on 450F to get that crispy crust, otherwise they'll turn mushy. I also leave the oven door open a crack to let steam out.

    ETA: Ha, I don't have to. I mistyped my 350 to 450 so all's good.

    Woke up late, drank some coffee, did some HIIT, then had a late dinner. I made myself some eggs with cheddar fried in Kerrygold butter, with two Dogfish Head brautwurst sausages and some kimchi.

    Last night was really easy and basic, but really hit the spot. Some (store-bought) breaded pollock, roasted potatoes, and some mixed veggies with butter and a bit of seasoning salt.

    Tonight I'm planning on roasting some butternut squash and having it with pasta, possibly tortellini, and a salad.

    I had a ham omelette and mixed greens salad for lunch, dansak (middle eastern lentil stew) and rice for supper. Also, as a late treat for my birthday I baked a chocolate cake, with raspberry jam filling and creamy chocolate icing. [​IMG]

    Tonight I made some carribean fish (whole tilapia, rubbed with cajun spices and cooked with diced onion, tomato and lime juice in the oven), served with coconut rice and fried plantain banana. It was goooood. :D
