I book marked this as I think it would be great even as a side dish and knowing it turned out well makes me want to try this. I will probably use something also to make it a bit spicy as per your recommendation. Thanks for the link

One of my favorite cooking/baking challenges is to turn traditionally decadent meals into healthful alternatives. Today, I'm doing a spaghetti squash primavera, one of my favorite dishes (which is already fairly healthy, in it's own defense).
I managed to make a pot of soup today. I had a turkey thigh and a chicken thigh so I threw them in a pot with water and added 7 garlic cloves, an onion, carrots, celery, potatoes, about a teaspoon of salt, a few turns of the pepper mill, thyme, rosemary, oregano, 1/4 tsp. ground cayenne pepper. I let it simmer for a couple of hours. I thought it would be bland with so little salt but it was quite flavourful. I'm sure the cayenne pepper added a lot, it had a nice burn to it, and I find that fresh thyme always deepens the flavour. I had a bit of the turkey and potato and carrot, but the broth was what I really wanted and it went down well. I have a tupperware of the broth and another of the meat and veggies to nibble on for the next few days. Soup is good food! This is my first low-salt meal endeavour. I'm glad it turned out well, there's hope yet. I was afraid I'd be subjected to expanse's plight of eating nothing but raw carrots! :-D
Actually yes if you used veggie stock it would be vegan. I put cauliflower, onions, sweet potato and potato in a pot with a tin of diced tomatoes. And covered with stock and curry powder and later I added a tin of coconut milk. Edit: I also meant to add kale at the end when I added the coconut milk, but I forgot lol.
For lunch I heated up some of the chicken broth I made yesterday and streamed in an egg. Egg drop soup! For dinner I made a big chicken breast and a baked potato with a side of the low-salt fermented cabbage. I baked the chicken and potato plain, then sprinkled both with paprika after it was out of the oven and it turned out nice and juicy. I had half the breast today, I'll have the rest tomorrow. It was a big 'un.
I'm taking the easy way out tonight and heating up some frozen Chicken Spring Rolls. I'll make Ramen Noodles to eat with them.

Last night I made borscht for dinner and a kiwi lime pie for dessert! Here's a pic of the borscht, but the pie got sliced and destroyed before I remembered. I have some pieces left but it looks like a mess now.
