i had pork loin sliced up very thin slices and cooked with mushrooms,celery some spice and bbq sauce ....on top of some flat rice noodles and some coconut gel for dessert (nata de coco)
I had to go to an appointment and was drained so I stopped and got a rotisserie chicken and roasted potatoes. Bought a broccoli cashew salad and greek salad to go with it. Did serve my own pickled beets with it. That has to count. View attachment 4100

I've seen those and wondered about them. I see you still have to roll it in the nori sheet but it's a lot easier I guess when it's all stuck together like that. Let us know what you think of it once you try it. I guess you used a rolling mat to make your sushi? I can't imagine rolling them by hand alone. I think the trick is in lifting it and placing it on the mat as you're rolling. This girl explains about that in this video. It's a good video, and I like the background music, so soothing. I made my own corn tortillas for the first time. All the tortillas in the stores have so much sodium. I bought masa harina, a type of corn flour. I added water only and formed a log, then cut it up into 16 pieces. That top part I cut again horizontally for another 8 pieces. I rolled them into balls then flattened them between two pieces of parchment paper. I don't have a tortilla press, so I used a heavy pot. You can see it made a nice shape, but it was still too thick so I thinned it out with my rolling pin. Cooked it up on a griddle pan (I used my crêpe pan) for a minute or so on each side, et voila! 16 fresh corn tortillas. I ate one while making them to make sure they were turning out okay. It was so good. It tasted like tortilla chips! Instead of the cardboard flavour in the store-bought. I'll freeze most of them to have on hand for burritos, quesadillas and fajitas. I made a bean burrito as my first meal with them. That's my homemade salsa in the pics. It's good but needs something I can't put my finger on. I might just be missing the salt, though I usually find salsas too salty. And this morning I made breakfast burritos. You can't really see it here, but there's homemade hash browns on the bottom, then eggs with jalapeños and smoked cheddar on top. They were so filling I only ate one. (I forgot to add berries!) They're not difficult to make, it just takes long because you have to wait for the tortillas to cook one at a time. I can see where a big griddle would really cut the time making these. And a tortilla press would keep the shape more uniform. I'm just not sure if they press them flat enough. I'd hate to buy one just to find I have to thin them out with a rolling pin anyway. Anyone have experience with a tortilla press? I'd be making whole grain flour tortillas too, so it would be worth investing in if they do the job right.
A wine reduction sauce. I like the sauce, but i'm disappointed because i had planned a simple vegetarian pasta meal but the sauce ended up very rich and complex and is just begging to be served with chicken and i have none i dont think the sauce and noodles will be complementary but we shall see, i'm boiling the noodles now.
fantastic!! i never seemed to have any luck getting dough consistency right. do you know about how much water:flour you used? and what exactly kindof flour? (so many varieties of the different grains, it seems). I literally just saw a press on tv. all they did was press and fry, so I'd assume you wouldn't ahve to roll. Maybe you press for longer to make it thinner or something. idk. awesome tho!

I have tried everything and I am beginning to wonder if it is because I do not have the same feeling in my hands with the neuropathy. When the kids are home they roll them and have no problems with it. Mia laughed when I showed her the video, I think she figures I am nuts to buy it. I may do it out of spite and get her one as well.
