Last night I made the kids sheppard's pie. I did use lamb so it is not a cottage pie. They enjoyed it and I had left over chicken as I do not like my food touching like that. I know, weird.
This may sound gross but it was awesome! Out of necessity, I grabbed some "survival" food off the pantry and threw together what I'll call, "Spambalya". I took a boxed Jambalya mix, diced a can of spam, added oil and extra water, a can of cream styled corn, a can of diced tomatoes, an onion, and Adobo seasoning. It took 25 minutes to cook and it is extremely tasty. Go me.
bbq steak and tomato ...and a baked potato (if microwave counts as baked...tastes the same anyway).. tomatoes are great on the bbq ..i slice into 6 wedges and put them on top rack with skin down near the done time for the steak...then when the steak comes off i crank it up to get the tomatoes burned a bit on the skin...they pull up a smokey flavour real well
More spirally veggies today. I tried a recipe for zucchini and carrot noodles with a cumin and turmeric avocado sauce. Yum, the sauce is so good. I cooked the zucchini a bit too long, you can see they're pretty shrivelled up. I'll have to watch for that next time. It was still good, but I would have preferred a thicker crunchier noodle. The orange went really well with it, the acidity cutting the richness of the avocado. Though I think graprefruit would have been even better.
No, no, no, no, no! I must not know how to make potatoes in the microwave properly, they always taste awful to be, rubbery like, not nice and crispy like baked. Is there a trick to it? I bet bell peppers would be good that way too.
My spiralizer is getting a workout today. Breakfast was eggs and hash browns. I think I mentioned using spiralized potatoes to make hash browns with. Because they're thinner than grated potatoes, they cook up quickly and crispier. Just wanted to show you how they look: And with my ubiquitous broken egg on top (at least it broke on the plate this time). And I'm running out of berries again! For lunch I tried a recipe of zucchini and sweet potato noodles with an avocado lime dressing topped with chili corn and cherry tomatoes. This is a keeper, so good. The sweetness of the spicy corn with the tangy lime dressing and acidity of the tomatoes go so well together. The noodles are raw (corn and tomatoes cooked) but they soften a bit from the lime in the dressing. Dinner is going to be pork back ribs. I don't think I'll spiralize those.
pretty simple i put it on the edge of the spinning part so it spins more and cooks more evenly... and if the fork doesnt poke it easy i set it for 2 more minutes and like the steak i let it rest a bit before eating it normal ovens take too long
How to bake the perfect potato: Rub olive oil and a bit of sea-salt on the potato and wrap in foil. place on shelf in oven. Delicious with baked beans in tomato sauce and grated cheese.
If you cut the potato into quarters, it bakes a lot faster. I also tend to slice them, put a bit of paprika on and in 10 to 15 minutes they're ready. I must have cooked mine for too long in the microwave. How long do you cook yours? And do you cook it whole?
Ribs with sweet potatoes for dinner, and a cucumber and tomato salad with fresh basil. I just put some Cajun seasoning on the ribs and broiled them.
roommate baked/broiled some chicken breasts today with garlic mayo dipping sauce for us. I sauteed some mushrooms side for myself. omg i ate the whole pan today (so tasty, but damn!!)
Mine's going to be Dirty Brown Corned Beef Hash with tomato, bell pepper, and onion. It's okay but not as good as Spambalya!
i was going to have scrambled eggs but i got distracted before they got scrambled and i ended up with an egg slab so i slapped some bread on each side and made a sandwich instead
