I added yellow beets to the zucchini and sweet potato noodles today. I sautéed it for a few minutes then added grated asiago cheese. Instead of roasting the tomatoes in the oven, I cooked them in the pan after the noodles were done. I got a quick pic after it was cooked this time. And I made an oh-so-yummy banana loaf. It's made with oat flour, coconut oil, Greek yogurt, maple syrup and macadamia nuts. Mmm, mmm, mmm!

aldis has some spicy tuna and I made spicy tuna sushi rolls ,, bullshit that needs to be raw fish. its the same things whether its processed out a can or a bag .. make your own yum yum with ketchup, sarachia and mayo.. spice it up your own way.

Zoodles! I made them into this, mango avocado dressing over the raw zucchini noodles. It was really good. It had green onion in the purée and I could really taste it. It complimented the other flavours really well. And a bit of hot red pepper chopped up gave it a nice kick. It was filling too.
I needed something quick to eat this morning, I was starving, so I finally tried the avocado toast with honey and chili flakes. It was fantastic. So quick and so good. I never thought of honey with avocado, they go so well together. I like the heat of the crushed red pepper too. I made the mini walnut bread loaves again today. So for lunch I had some. I started out with my favourite applewood smoked cheese with the bread. I decided I needed more (I'm so hungry today!) and added leftover meatloaf and tomatoes and slathered the bread with mayonnaise. I kind of made a makeshift meat loaf sandwich as I ate. The sun is shining, I'd better head out and work some of this off!

I had more avocado toast with the honey and chili flakes this morning but on walnut bread this time. I love this quick meal. Filling and tasty. And the veg noodles for the day, butternut squash! I didn't get a pic of the meal, but I made a new recipe with the butternut squash noodles, with herbed ricotta and curry roasted veggies (carrots and broccoli). The butternut squash I just sautéed in a bit of oil, with garlic. The whole thing topped with walnuts. And fresh pineapple on the side. It was delicious.
I had the exact same thing, except I had a tuna sandwich And I also had avacado toast this morning but without the honey and chili flakes, I am intrigued
Last night made a roast beef dinner with yorkshire puddings, asparagus, mashed potatoes and blistered herb tomatoes. Peppercorn gravy to smother it with. Tonight I made chicken burgers with lean ground chicken, rosemary and Dijon. Served with burger fixings, it was good.
