What did you cook today?

    I love crepes but haven't ever made them myself. I gave it a try today. It's fairly easy and quick. The longest part is chilling the batter for an hour or two in the fridge before cooking.

    For lunch I used up butternut squash noodles I had left over and made a few zucchini noodles to go with it. Just sliced and sautéed garlic with grated asiago cheese mixed in. The softer squash and crunchier zucchini really went well together along with the crispy garlic. Yum!

    Last night I did a maple syrup basted ham with scallop potatoes and cauliflower and sauce.

    Tonight I made meatloaf with oven roasted potatoes and candied squash, green beans and stewed tomato.

    Can you share the recipe, pretty please. I have tried a few but have found some are a bit dry and not what I expected. Those look delicious! :)

    Well, since you said pretty please. :-D This is the recipe I used, pretty basic. But it might be that you're not letting the batter sit before cooking.The gluten needs to relax, which gives it a better texture, not as grainy and dry. It should be chilled in the fridge (for safety reasons) for a few hours.


    [SIZE=14pt]Crepes[/SIZE]
    • 1 cup flour
    • 2 eggs
    • 1-1/4 cups milk
    • 1/2 teaspoon pure vanilla extract
    • 2 tablespoons unsalted butter, melted

    1. Place flour in large bowl.
    2. In small bowl, beat egg and add to flour.
    3. Add milk and whisk until smooth.
    4. Add butter and stir.
    5. Place in fridge and chill for at least 2 hours to overnight.
    6. After batter has rested, heat a lightly oiled 9 to 10 inch pan over medium high heat.
    7. Pour batter into the pan, using approximately 1/2 cup for each crepe and tilt pan with a circular motion so that the batter coats the surface evenly.
    8. When the top looks dry or forms bubbles (about 45 seconds), loosen with a spatula and flip crepe over.
    9. Cook for about 20 to 30 seconds.
    10. Remove and set on plate.
    11. Repeat steps 7 to 10 until batter is gone.

    I love chicken hearts! And gizzards. My grandmother used to put them in chicken soup, but I'd never had them fried before I saw your posts about it. I think it's a southern thing, deep fried.

    I made a seafood crepe for lunch from the last batch of crepes I made. Mmm, it was so good.

    And for dinner, one of my favs, cedar plank salmon. I cooked it in the oven, usually I make it on the grill. And couscous to go with it.

    i put them in a fry pan with water and spices...they boil for a long while on low heat then i add a bit of oil when the waters almost gone and pan fry them until they shrink a bit


    then salt ..pepper and ketchup

    Chicken and cheese quesadilla. I shredded the chicken and seasoned with lime juice, cilantro, garlic, salt and pepper. Simple and delicious!

    That's what I had for dinner too! I had leftover chicken breast in the fridge so I broke it up, shredded some brick cheese over the chicken and put it all between two of the corn tortillas I made and froze last week, and heated it up in the pan. Ate it with salsa I made and plain Greek yogurt.

    And this for breakfast.

    Lunch was a leftover potato and sardines, with tomatoes. It was quick meals day today.

    I used your recipe when I made them, but I think I probably didn't put in enough water so didn't boil them long enough before fryiing them. They were a bit too chewy. I'll have to try them again. I still liked the taste, but I'd prefer not to have to chew each of them for an hour.

    When I was a kid, I know some would parboil or pressure cook gizzards, cool them down in buttermilk(I've heard some say to add vinegar), then batter and fry. I rarely eat gizzards now, but the ones cooked like I mentioned above weren't too chewy. My mom cooked chicken heart with the rest of the chicken(roasted); it always turned out tender. I've never had a meal of just chicken hearts - although I would likely enjoy them.

    I cooked Russian salad. Quite healthy.
    Chopped boiled potatoes, canned green peas, chopped boiled beetroot, red kidney beans (canned too), chopped pickled cucumbers. Dressing: sunflower oil. Salt to taste.


    P. S. Sounds weird but the taste is great.

    let's see, I made a spinach and meat curry today. it actually was very good...just, not inspired to take pics.

    my roommate has been buying and steaming us asparagus lately too. This is nice! I like veggies! :D

    I ran out of "likes" but this sounds good, not weird. I think I attempted something like this once...but it had some different dressing, like added sugar...or well, maybe because my recipe didn't have beets.

    did you pickle your own cucumbers??? I used to do this. I've since forgotten, but maybe that adds flavor as well.

    awesome!!

    now I have to find something to eat. Starving!! :D

    I toasted some toast for PB&J. lol Nah, I cooked some potatoes and eggs today. Mixed together. An old German dish.
