Hubby is going to make pork chops, that have been marinating in honey, acv, onion, and garlic. We will have baked sweet potatoes; and I'll make fresh green beans or fresh broccoli to go with.
I made lazy cabbage rolls again too! I'm finding I like this dish even better than the actual rolls, and it's a lot less labour intensive. It freezes well too so I have a bunch in the freezer now. I also made roast beets (now you have to make those too!) to go with it this time.
Ohhhhhh now I am super interested if this freezes good as well! Did you post a recipe? Also LOVE beets
Hmm, not sure if I posted the recipe, so here it is. If you want to freeze some you can just make a double batch. I'll post the beets recipe too. [SIZE=16pt]Lazy Cabbage Rolls[/SIZE] 450 g ground beef (1 lb) 1 tsp onion powder 1 tsp garlic powder 1 tsp paprika 1/4 tsp dried thyme 1/2 large cabbage, cut into 1/2 inch pieces 2 cups cooked rice 2 cups crushed tomatoes or tomato sauce 1/2 cup water or beef broth Put cooked rice in a large bowl. Put cut cabbage on microwaveable dish and microwave on high for 10 minutes. While cabbage is steaming, brown the beef in a skillet. Drain the grease and add to rice. Add tomato sauce and spices and stir. Stir the cabbage into rice mixture. Scoop into a large casserole dish or deep 13x9 lasagna pan. Pour water or beef broth over top. Cover with aluminum foil and bake at 350F for 90 minutes. Makes 6 servings. ------- [SIZE=16pt]Roasted Beets[/SIZE] 900 g beets (2 lbs) 1/4 cup water 2 Tbsp olive oil 4 garlic cloves, halved 2 tsp dried basil salt pepper Trim off stem ends and wash beets. Peel beets and chop into bite size pieces. Place on double thickness of foil and drizzle with water. Wrap foil over beets and seal package tightly. Place on baking sheet and bake in 425°F oven until tender, about 1 hour. Unwrap beets and place in ovenproof glass baking dish. Add garlic cloves. Drizzle with olive oil and sprinkle with dried basil, salt and pepper, turning to coat. (Make-ahead: Cover and refrigerate for up to 1 day.) Roast, covered, in 425°F oven until heated through, about 30 minutes.

sliced pork loin chop suey i made it kind of plain this time...just pork thin sliced julienne style ...a bit of mrs dash spice then i add in a bunch of bean sprouts and s bit of thin sliced celery when its all done i throw a bit of maggi sauce on it
I re-created a casserole my Mom fixed when I was a kid that I really miss. I asked her about it recently, she remembered the one I was talking about but didn't know how it was made. So I went about fixing it. I remembered it had corn meal biscuits on top, sauce tasted like un-drained canned kidney beans, ground beef, onion powder, salt and pepper. And tomato sauce. All in a casserole dish. Took a guess and baked it at 325 degrees F for 20 min, then checked. not quite long enough. Five min. later it was done. I got it right! Of course only I would eat it, my daughter is a super picky eater...I used to b also so I've no room to talk. Just glad it worked out.
I'm jerking pork. It is kind of hard to get the pig to sit still for that. One of my coworkers suggested Vermouth first. Actually I made the sauce and am marinating it tonight. It will go in the smoker tomorrow. C/S, Rev J
i was hungry for bacon so breakfast/lunch was a full pack of double smoked bacon wasnt much left of it after i cooked it though...but it was damn tasty and i worked enough today in the heat to not feel bad about pigging out
The pork just came out of the smoker. Combining it with a Red Stripe. The spices in the Jerk give the Stripe a nice caramel like finish. C/S, Rev J
