I'm off to India for a few months in March and eating meat isn't very safe over there at all so I'll be going veggie while there, anyone know what's good to eat for Iron since I won't be eating red meat?
Iron is already in most veggies, especially chickpeas (aka garbonzo beans). In reality, you'll need to watch your protein and B-vitamin levels the most. The easiest way to do that is to drink soymilk or eat many other soy-based products (like tofu), which contain large amounts of high-quality protein, and to supplement every now and again with a B-complex vitamin supplement. Other than that ... you ought to be good, methinks. Have fun! And don't disrespect the cows!
actually, if you eat the right vegetables and lots of nice raw foods you won't have to worry to much about protien.
if you can, try and get vitamin c when you eat your iron - it helps you absorb the non-haem iron in veggies.
id becareful of the VEGETABLES in india. In many third world nations, they use "night soil" fertilizer. That lovely fertilizer is human excrement. Not sanitary at all if its not treated. India is big on using night soil. Id be weary of eating local vegetables.
