Which kind of refrigerated cheese is the best kind to eat by itself?

    I grew up in Eastern Wisconsin and my dairy farm friends told me what goes into velveeta..I have never eaten it since.

    Nothing specific. The older it is the more taste it gets. I just mean I prefer it if its older and harder, above the softer freshly made cheeses

    A sharp or extra sharp cheddar. Pepper jack is pretty good too

    Why do these have to be refrigerated cheeses?

    Cheese has been around for a few thousand years.

    Refrigerators, what? 100 years?

    How did we survive before that, in regards to enjoying cheese?

    If you're seriously asking, I believe it was volume and wax. I'm assuming the wax they used to pour over cheese wheels aided in preservation, as well as those giant cheese wheels. I think with the big ones, the outside would spoil, but you'd cut a few inches into it, and you'd find good cheese.
