Even if you don't agree people can medically and/or legally changed their gender, the polite thing to do is to let them call themselves whatever they want.

Let them choose whatever legal status on official documents they want. And address them as they want to be addressed, sir or madam. The same way you would want people to address you. For example address you as a Republican or Christian, even if they are one and they wouldn't call you that.
