birthday cake?

    Manny is turning a year old on Tuesday!

    We are having a small gathering with some of his friends (probably 6 kids ranging from 15 months to 4 years old). Am looking for a cake recipe that is dairy free, nut free and doesn't feature a ton of refined sugars or refined flours (meaning brown sugar is ok, and whole wheat flour is ok, but no bleached out white crap).

    Anyone have a killer recipe?! Figure if I was going to get a good one recomendation it would be amongst you nutritionally savy Moms and Dads!

    I used a packaged mix for Moire's. It was organic, GF, DF, nut-free, and vegan. The only sweeteners were evap. cane juice and some beet juice. It was a chocolate cake. And it was AMAZING! And it saved me time and frustration as I am a HORRIBLE baker. It was Namaste brand. ONe of the best GF alt-cakes I've ever had. It wasn't grainy and gritty like GF items usually are.

    One thing I forgot when I made Moire's cake: It was completely allergen-free, frosting included. But I used lots of food dyes in the frosting, and Moire broke out SO bad from it. So remember, food dyes are also not so great!

    thanks for the help, hon... only problem is that there isn't a lot of vegan food mixes around town. Could probably find one in the city, but don't have time to get there. Thanks for the info about the food dyes!!

    I don't know what chains of stores you have up there, but down here Namaste brand is available in just about any HFS and even in most regular super markets in the natural aisles!

    In the mean time, I'll try to find some reliable recipes for you!

    i found one for an apple swirl cake... the recipe looks good, sounds good. will make it tonight and let you know how it turned out!

    cake turned out well... lol. Ok, the second attempt turned out well, the first attempt didn't "turn out" at all, meaning it stayed stuck in the bundt pan!

    The cake was an Apple Cinnamon cake, made with whole wheat flour and brown sugar. No dairy. Topped with a light sprinkle of icing sugar (powdered sugar, confectionary sugar...different places, different names). Mandred and his buddies loved it, as did us adults. Not too sweet, and not horrible for you!

    thanks! The cake was pretty nummy. Manny is a big boy.. always has been. He is really, really long. As of today he is 33.5 inches long and 24.75 pounds. Here is a pic that clearly shows how big he is taken at the end of July.
