hey everyone! yesterday was an awesome, warm, whiff-of-spring day and i celebrated by making an amazing fresh simple dessert. I highly highly recommend it, it's super easy and the taste is incredible. it's called a Blueberry Fool. It's evidently a classic English dessert and can be made with blackberries, raspberries, etc. here it is, i hope someone tries it and loves it as much as i do!: 2 cups blueberries (wash them! i feel like everything is coated in pesticides); 1/2 cup sugar; 1/4 tsp cinnamon; 1tsp lemon zest; 1/4 cup slivered almonds (don't skip these, they make the dessert amazing-er ); 1/4 cup heavy cream; 1/2 cup plain yogurt In a saucepan, combine berries, sugar and cinnamon over high heat, bring to a boil, stirring. reduce to med. heat and simmer 5 min. til berries are soft. use a fork to crush the berries into a puree. remove from heat, stir in lemon zest. cover and refrigerate til well chilled. toast the almonds on a baking sheet about 5 min at 350degrees til golden brown. (you can do it in a pan on the stove, i did) Let cool. In a bowl, combine yogurt and cream. on high speed, mix til thick peaks form. Gently fold in the berry mixture, don't mix it uniformly, it should be a swirly cream and blue tie-die kind of look. Spoon into parfait or martini glasses, something to show off the color. Presentation is everything! Refrigerate for a few hours if you can wait that long. Sprinkle with toasted almonds and enjoy!
