Why does one become a vegetarian (or one of the many variations thereof)? There are countless answers. The ones that come quickest to mind are: Concerns of animal cruelty Notion that it is a healthier life choice Greater sustainability of the planet (more food comes from the ground than from animals that roam) Cost of food bill There are many more. Since I am not a full-time vegetarian, I find that I celebrate the successful meals that are prepared with things from the vegetable kingdom. I often forget that the preparation of such dishes does not have to be painstakingly long or involved. Grains can be made in quantities that can be used for multiple meals per week. There is no rule that indicates that a plate should/must have only one bean/legume. I have a collection of soups that are suitable for any meal (or snack). Celebration, IMHO, is a mindful activity. It reminds me to be attentive and aware that care was used in preparing the dish(es) and that I am being kind to myself, to the planet, and to some anonymous animal out there for a self-sustaining meal that is healing and nutritious.
I celebrate nature every toke I take. Industrial cows, pigs chickens add to pollution of the air, water and earth. We grow so much animal feed like soy that we could be eating in lieu of meat. The diseases animals carry that threaten our health. The unnecessary slaughter of sick and deformed animals. Billions of birds, millions of cattle every time there's an epidemic. Yeah there's lots more reasons still
