Psychology is a huge topic, does it have to be humans?
If not, I would write about dog behavior. Perhaps you could analyze Pavlov's experiments on dog's classical conditioning.
Would make for an interesting paper, also it would probably be pretty easy

I had an "Anything related to Psychology" paper in my psychology class.
I wrote a 8 page paper or something and got 98%. It was about body language and poker from Joe Navarro's book Read 'Em and Reap.
People also did the study of sleep, dreams,lie detectors, types of therapy, and a cool book called "rethinking thin".
There's also another book where this boy gets his penis cut off as a child and they decide to raise him as a girl with never telling him.
