I'm not a vegetarian, but I'm going to a Rainbow pot luck which is. Do you guys have an EASY vegetarian receipe good for a party or pot luck? I'm sure there are threads with this, but I'm too lazy to search that in depth.
Macaroni & cheese. The fancy kind, baked with Kellogs Corn Flakes on top. Your spagetti recipe can be made vegan easily. One of my favorite veg receipes is French Onion Soup with vegetable stock instead of beef. The cheese on top the vegan issue again though. Any kind of soup is nice, but hard to transport.
thai noodles. I figured this one out at a main circle: noodles veggies peanut butter garam masala lemongrass basil boil noodles, saute veggies heat pb and spices thin with: water, veggie stock or other veg-friendly liquid toss together
Thanks, guys! I wonder how the stir frys will keep and travel and reheat? Do you know? The thai noodles sound substantial. I was trying to go for an entree to help fill people up. And, yeah, everything I seem to think of has eggs or cheese or milk in it, so I appreciate anything yall can throw my way!
do not try and reheat stirfries....gross!!!! maybe they have a big bbq plate where you are going and you can get those noodles in a packet and then all you need is the bbq plate and the vegeis...otherwise how about something like sushi? it is really easy to prep beforehand and should last for a day or two if you store it properly.... have fun by the way!!!
there is veg sushi! but winter potlucks need warm food. My thai noodles travel well from the house to a venue (I feed a lot of musicians) in a tall narrow pot to make the smallest area for heat loss. I wrap in two thick towels and an old sleeping bag as well. (yes, I strap it in a seatbelt after it is all rolled up.) what's your travel time?
About an hour. I'm thinking of doing potato soup in a crock pot, if I can find a receipe? That sounds filling and I can keep it warm that way.

Well, yes, but I was really trying for Vegan, but man, that is hard, not using the eggs, milk, butter or cheese. That was really stumping me, so I'm going vegetarian with the dish and bringing a vegan beverage mix. And yeah, I'm going to do something with taters, but baked would require knowing how many people will be there and I don't have a clue. What do vegans eat them with? Molly McButter? Tofu? Plain?
Common dairy substitutes that are Vegan: Earth Balance and Soy Garden margarines Better than Sour Cream and Better than Cream Cheese by Tofutti. Follow your Heart Vegan cheese, in mozz and cheddar flavors. Parma Vegan parmesan substitute. Silk Unsweetened soy milk All these are perfect substitutes for dairy items. The Vegan Cheese doesn't taste very good plain (IMO), but it meals into food fairly well (I've heard you have the best results if you melt it before adding it). They are all readily available at HFS, Wild Oats, Trader Joes, and many supermarkets (Kroger aka Fred Meyer carries everything on the above list except for the cheese). Eggs are tougher. If you have a knack for cooking, you can make quiche from tofu, but it's not easy. I've had good success, but I am a former professional chef. Egg subs for baking are fairly easy, and there are many good subs, but the best sub varies from recipe to recipe. Egg subs for baking: banana applesauce flax meal blended with water whole flax in cheesecloth or tea infuser boiled in water pureed prunes extra baking powder Ener-G egg replacer There is also vegan mayonnaise called Veganaise. This is way more than you want to know for one recipe, I'm sure, but it's always good info to have stored in the back of your mind for the next pot luck.
*** You have to try *** ~~~chocolate tofu pie~~~ 1 box (1lb.) Silk smoot tofu about 2 c. choc. chips *I love the Rainforest brand (go for mor chips if you like it super chocolatey) 1/2 c. honey 1 1/4 c. soy milk (get vanilla flavor) 1 tsp vanilla Then for the crust: either make your own ghram cracker crust or buy one premade (easy and less messy) Just melt the choc chips in a double boiler, then add all ingredients to a blender. Mix till smooth (Like pudding). Pour all in crust, and bake at 350 or so till it looks like its getting cracks on top (I always go like 35-45 min). The pie filling is super hot and still a lot like pudding at this stage, so put it in the fridge to cool, then freeze it for a frozen tofu moose chocolate pie. It is freaking fab. with strawberries, or raspberries on top too...mmmm... Anyway this has been such a hit at all of the veg parties. It has also converted people who are affraid of tofu!!

My suggestion, try a substitute, like to ones listed above The thing is this isn't a vegan receipe (honey). At least some of my vegan friends weren't eating honey for a while... I don't really know what the score is with that.
honey is a tecnicality and usually a personal preference and no one agrees with anyone else. that's a vegan law, i think. to be Xtra sure on vegan, have the veggies and peanut butter separate from noodles. some are made with egg & rather than dealing with that, make 'em separate or make brown rice instead (which holds the temp even better)
