I'm going to Amsterdam for five days the week before Christmas with a mate. Can anyone recommend some good coffee houses (preferably some organic ones), restaurants, markets, music venues....? Anything really, bearing in mind that I'm a poor student.

I hear you on the organic thing, not all stock it but places like Dampkring, Tweede Kamer, Hunters have some, just ask the dealer or see their menu. Waterlooplein market is worth a visit another is Albert Cuypt I love those army surplus market stalls my self. The Melkweg is probably the Daddy for music venues but I'm sure many others can advise better here on this. As far as restaurants, you will be spoilt for choice believe me. Have a good one.
