    wood, charcoal, or gas?

personally i prefer wood if it's quality wood. certain woods offer an unbeatable flavor to the food.

charcoal is consistent in quality and always good, though, and offers a similar taste.

with a gas grill you may as well just roast it in the oven or broil it, as far as i'm concerned. it adds no flavor, and theres no point to cooking on a grill if it doesnt change the flavor, if you ask me.

I like charcoal, it's easy and it does add a nice taste. Though I do use my gas grill sometimes too for quesadillas.

I generally cook with an aluminium plate on top of a running care engine.

Same here... apple wood is particularly good for smoking. It adds a very nice flavor to baby back ribs.
