Hushpuppies (Allow to chill overnight)

    2 T. sugar, 1/4 c. onions (minced), 2 c. yellow corn meal, 1 c. white corn meal, 1/2 T. salt, 1/2 T. black pepper, 1 t. baking power, 1 1/2 c. buttermilk, fat for frying. Mix all ingredients, except buttermilk and fat in large bowl. Add buttermilk just until mixture is of a consistency to be rolled into small balls. Let stand in the refrigerator overnight. Can be kept in the refrigerator, covered for several days. Roll into small balls and drop into fat heated to 250 F. Cook until brown. Serve hot, with a shower of lemon zest, some wedges of lemon, and a bowl of tartar sauce for dipping.

    Growing up in the south and attendng lots of fish fries, I love hushpuppies (w/ lots of ketchup), but had to adjust them to an eggless vegetarian diet.

    I'll try this recipe later on. Thanks.

    what the heck are hush puppies?...I thought they were a shoe brand, but obviously you're talking abut something different.

    Its kind of like deep fried cornbread with onion in it.

    Fold in fresh or frozen bay scallops for a sweet surprise. You could also use sea scallops cut into quarters or rock shrimp.
