I'm sure we've done this before, but...........I'm getting sick of our lunches. I need some new ideas. What do you all make for the kids and yourself for lunch?
hm, well, my child has a lot of oral sensory issues and only eats certain things. and he's off of gluten, dairy and various other things, so our diet is a bit different than what most people are used to. right now, lunch often looks like: rice cakes with natural peanut butter served with fruit high protein pancakes (1 egg, 1 banana mashed, and a good dollap of peanut butter) planned-over chicken breasts served with raw carrots boiled eggs/fruit rice noodles tossed with flax oil and topped with nutritional yeast sprinkle
Right now I have a biiig favor for vegetable soups. I just buy whatever vegetable I get, fry some onions in a pot, trough the cut veggies in, potatoes are usually in there, some veggie stock, spices of all sorts, cook, then puree, and I top the servings with ground cheese. Even my not so veggie-liking boyfriend loves my soups!!
I know what you mean Rainbow. My kids will only eat certain things, are all extremely picky, and I get so frustrated making the same things over and over again. I'm on the look-out for new recipes to try that they might actully eat. I will admit to catering to them however. I am forever being told that I need to just have the kids eat what is put in front of them instead of being their short-order cook but I can't stand the thought of them leaving my table with a rumbling belly. So I wear myself out trying to satisfy all of their taste buds.
my kids eat I guess normal lunches but this is the usuals. -Banana and peanut butter sandwhiches on whole grain bread -spagetti -cheesy enchilada rice with veggie meat crumbles and sometimes put into tortilla wraps -homemade pizza and baked french fries -plain noodles (they love them, I have no idea why, lol) usually with green beans as the veggie and or a meadly of veggies like cauliflower, carrots and greenbeans -chicken noodle soup with goldfish crackers and raw carrots on the side -tomato soup and grilled cheese sandwhiches, I usually like to add apple slices afterwards. they always have a veggie or fruit and sometimes both with every meal... carrots, cauliflower, brocoli, green beans, peas, or a mix and peaches, apples, applesauce, and pears are all the ones they love and ask for.
kai's really into veggies at lunchtime. i like to cut up an avacado, get some grape tomatoes and some baby spinach with some ranch or italian dressing for dipping. add some yogurt if she's still hungry. she's pretty easy with the a la carte stuff.
I forgot to add this earlier. Lately I've been baking alot and the kids love it... zuchini bread, banana bread, apple cinnamon muffins... its nice to add as a snack after they finish lunch.
mmm.... yummy!!! i haven't baked anything in forever, now my belly is ready for me to get to the oven - lol!!!
