Preserve or Jam recipies?

    Today I made Strawberry Jam from berries we got locally. I used the Sure-Jel recipie and it called for 5 cups berries to 7 cups (!) sugar. That sounded like a lot to me, but I went ahead and did it their way. Everything set, everything sealed, but it's too sweet! It's been a long time since I fooled with jam so I can't remember what recipie I used, but I don't think it was this one. Does anyone know of a recipie that uses either less sugar or substitutes honey? Please include method and times with ingredients. Thanks!

    3 chai bags would be an excellent substitute for honey. I've got have a dried black cherry & appricot preserves recipe I haven't made it yet
    The tea will give it a chutney taste to it for like if you'd want that

    I hate to post without any real advice but I'm interested to see what people say about this...
    I would also LOVE to make my own jam!

    I will say... try google, "low sugar jam" or even "natural jam" or "diabetic jam" recipie

    I made Strawberry Jam yesterday...

    About 3 lbs of Strawberries[a few extra than I'd normally use, due to a bit of a glut].

    3 lbs Sugar.

    1 Apple, chopped up [to add Pectin, to help the jam set - Strawberries are low on it.]

    It seems to have worked out all right - the sample I tried this morning was excellent, very fruity.
